Huang men ji (Chicken)

* 2 kg of thigh chicken, cut in pieces (you also can use chicken with bones here)
* 3 ball of garlic (even more garlic)
* 1/2 to whole package of Huang Men Ji spices (especially from Yunnan), see picture below.

Mix 1/2 to whole package with hot water. Fry the garlics in oil, a little more than usual, until the garlics become yellow. Add the chicken and fry for a while. When the chicken is a little bit yellow, add the sauce and fry them together. Add hot water until cover all chicken.
Use lid to cover the pan, then cook together for 1 hour with smallest fire. Then open the lid, use the big fire to evaporate extra water and ready is the dish.
